QUICK AND HEALTHY RECIPE OF THE MONTH: APRIL

Quick and healthy recipe. Baked chicken breast, avocado, and spicy cauliflower recipe for dinner. This dinner settles all food cravings and is a very healthy and balanced dish.

This recipe is very easy to prepare and cook.  Just follow the directions below, and you will have a fantastic dinner waiting for you!

Ingredients

  • 1 package of a 1.5lbs organic or kosher chicken breasts
  • 1 head of organic cauliflower
  • 1  ripe organic avocado
  • Olive Oil (amount used will be different if you are cooking larger portions of chicken)
  • Sea Salt
  • Black peppercorn pepper
  • Red Hot or Siracha
  • 1 lemon

How to prepare the chicken

  • Cut the chicken breast thinner so that it will reduce the baking time. Start cutting at the thickest part of the breast and continue to the thinnest part, until you cut all the way through.
  • Place chicken in a baking pan
  • Drizzle olive oil on the chicken
  • Salt and pepper both sides, to your taste

How to prepare the avocado

  • Cut the avocado in half
  • Remove the pit
  • Dice the avocado
  • Remove the skin
  • Mash the avocado with a fork or a hand held masher
  • Cut the lemon in half
  • Squeeze the juice into the mashed avocado (remove pits)
  • Salt and pepper to taste
  • Mix the ingredients

How to prepare the spicy cauliflower

  • Cut the cauliflower off the head
  • Place the cauliflower in a large ziplock bag or bowl
  • Add the RedHot or Siracha generously into the bag or bowl
  • Shake the RedHot or Siracha together or mix them together in a bowl
  • Add cauliflower to baking dish
Cooking directions
  • Preheat the oven to 350 degrees
  • Bake until the internal temperature of the chicken is 165 degrees

Cook the chicken and cauliflower.  Let them rest for 5 minutes. Then plate the two and add the avocado mixture on top of the chicken.
