This my favorite dinner recipe from Cook Eat Paleo! The crock pot chicken recipe is simple but delicious.

My client calendar is crazy Monday through Saturday, and can change at any minute.  As a personal trainer, you have to schedule and train clients working around their schedules; so you can imagine how nuts my life can be knowing that the typical American has a very busy lifestyle.  When I get a little downtime between training sessions, I try to be as productive as I can, like preparing meals.

It’s typical I will have a break in the middle of the afternoon, so last Friday, I was able to make this chicken recipe.  I prepared it, and then went back to work for the evening.  By 6:30 pm, my dinner was ready to be served. My dinner guest arrived, and we were able to sit, eat, and relax together.

After a long work week, there is nothing like a healthy, balanced meal filled with protein, vegetables, carbohydrates. I also, baked an acorn squash in the oven while preparing the crock pot chicken recipe.  The juices from the slowly cooked chicken, marinate the other ingredients added to the crock pot.  The vegetables fill with favor.

Acorn Squash Recipe:

Instructions on baking acorn squash in the oven. Preheat oven to 450 degrees.   I use my glass bakeware.  Fill the bakeware with a little water or bouillon about 1/2 to 1 cup, depending on the size of the squash.  Cut the acorn squash in half, and the stem off.  Use a tablespoon to carve the seeds out of the squash.  Place the squash, downward in the bakeware, and the skin faces upward.  Cook time is about 1 hour.

Helpful Digestive Tips:

The gelatin from the chicken is very healthy for your GI(Gastrointestinal) tract. The gelatin helps repair the intestinal damage. The gelation truly helps my intestinal health.

It doesn’t have to take a long time to prepare healthy food, but you do need the fresh foods and ingredients to make them.  I enjoy new recipes with fresh produce and ingredients and making enough for seconds.
